Fresh Fruit Smoothie

Our friends at Café Nora in Latham (who make the best smoothies around) tell us to first peel and then freeze ripe bananas for a perfect smoothie every time.

6 - 10 whole, frozen strawberries
1 frozen, peeled banana
2-½ cups vanilla soymilk

Place ingredients in blender and blend until smooth. Experiment with other fruits including peaches, blueberries and raspberries.
Makes 2 servings.

Oven Baked French Toast
(*Spring Brunch Favorite*)

¼ cup butter
2 tablespoons honey
½ teaspoon cinnamon
3 eggs
½ cup orange juice
1/8 teaspoon salt
6 slices bread
powdered sugar (optional)

Preheat oven to 400 degrees. In a saucepan, melt butter with honey. Spread mixture on bottom of 9 x 13" pan and sprinkle with cinnamon. In a bowl, beat eggs, orange juice, and salt. Soak each slice of bread in the egg mixture. Then, place bread in pan. Bake for 20 minutes.
